Hi, I’m Courtney — the owner of Flippin’ Out.

 

For the past 15 years, I’ve worked as a nurse. I’ve spent most of my life taking care of other people, but deep down I always wanted to build something creative of my own too.

 

One day, I randomly came across a video online of someone making mini Dutch pancakes, and for some reason I couldn’t stop thinking about it. What started as a simple idea turned into something way bigger than I ever expected.

 

Flippin’ Out actually started right in my driveway. I began serving mini Dutch pancakes to my local community just to see if people would even show up... and they did. Families came out, people shared my food online, and the support honestly blew me away. Seeing people excited over something I created, made me realize this dream might actually be possible.

 

Getting here definitely wasn’t easy, though...

 

Before this trailer, my family and I spent countless hours trying to turn an old R- Pod camper into a food trailer ourselves. We poured so much time, money, and effort into it before finally realizing it just wasn’t going to work the way we hoped. Eventually, we traveled all the way to Wisconsin to buy the trailer that became Flippin’ Out.

 

Since then, it’s been nonstop learning. From permits, inspections, equipment, figuring out towing, buying another vehicle for the trailer, building a website, creating a menu, designing branding… honestly, there were a lot of moments where I questioned if I could really pull all of this off.

 

But my husband has supported me through every step of it, every crazy idea, every late night, and every challenge along the way. My kids have also been part of this journey from the very beginning, helping more than they probably realize.

 

Flippin’ Out became more than just pancakes to me. It became proof that it’s never too late to chase something different, even when it feels scary or uncertain.

 

What I love most is bringing people together. Whether it’s a wedding, school event, festival, fundraiser, or neighborhood gathering, there’s something really special about watching people smile, hang out, and make memories around something fun.
